Central in Lima, Peru is named The World's Best Restaurant 2023, sponsored by S. Pellegrino & Acqua Panna, as well as The Best Restaurant in South America, at the awards ceremony for The World's 50 Best Restaurants 2023 held in Valencia, Spain, this evening.

主廚Virgilio Martinez和Pía León的利馬旗艦餐廳Central榮登榜首，接替了2022年的冠軍、哥本哈根的Geranium，后者已晉升Best of the Best名人堂。 

Central是2022年榜單的亞軍，這家餐廳贊頌了秘魯，在其研究部門Mater Iniciativa指導(dǎo)下，其菜單彰顯了秘魯本土食材的獨特生物多樣性及其傳統(tǒng)和歷史，同時倡導(dǎo)了可持續(xù)性。緊隨Central之后的是巴塞羅那的Disfrutar（No.2）和馬德里的Diverxo（No.3）。

南美有九家餐廳上榜，包括兩家新晉餐廳：利馬的Kjolle（No.28）和波哥大的El Chato（No.33）。亞洲緊隨其后，有七家餐廳上榜，包括被評為The Best Restaurant in Asia的新加坡Odette（No.14），以及新入榜的曼谷 Le Du（No.15）和Gaggan Anand（No.17），還有東京的Sézanne（No.37）。兩家迪拜餐廳首次入選榜單：被評為The Best Restaurant in Middle East & Africa的Trèsind Studio（No.11）和Orfali Bros Bistro（No.46）。
